Honestly that rig is overcomplicated. Just something to show off. I would definitely just use simple bones and no IK at the moment. My advice is use IK if the rig is affected by external force such as wall, ground, table or maybe two hands hold an object (box, two handed sword etc.) in this scenario just go with simple setup

I would like to do an affect like this for a knee that has IK. I think this technique is pretty similar to the one in the video below.
